Chocolate Marshmallow Pops

Valentine’s Day (this Friday!) can be more than just a celebration of your one special love. Maybe you have love for the whole world – your friends, neighbors, colleagues or teachers. You want to give them a little something on Valentine’s Day.

But it’s impractical to buy everyone a box of chocolate. Nor can you walk about with one big box and say to each of your friends, “take one!”

So here’s a recipe for a festive Valentine’s treat that’s quick, easy and inexpensive to make.

Ingredients:

  • 12 heart shaped Peeps or Campfire Marshmallows
  • 2/3 cups (4½- ounces) Nestles semi-sweet chocolate chips
  • 3 ounces whipping cream
  • Festive red, white and pink nonpareils, or sprinkles

To Make:

  1. Insert 6-inch lollipop stick approximately ¾-inch into point of each heart shaped marshmallow; set aside.
  2. Place chocolate chips in medium glass mixing bowl (glass bowl is necessary so that chocolate can be reheated in the microwave, if necessary/ 15 seconds on 50% power).
  3. In 1-quart saucepan add cream; cook over low heat until cream is very hot, but not boiling (tiny bubbles will form around the outer edges of cream).
  4. Pour cream over chocolate chips. Let stand 1 minute; stir with wire whisk to finish melting the chocolate.
  5. Dip marshmallow half way into chocolate holding the pop over the bowl, allowing excess chocolate to drip off.
  6. Sprinkle with red, white and pink nonpareils.
  7. Stick pop into cake pop holder or Styrofoam and allow the chocolate to harden.
  8. Repeat procedure using remaining marshmallows and chocolate.
  9. Allow pops to dry for several hours or until chocolate is hardened.
